A Taste of Brazil: Pirão


Pirão is hard to translate – it’s not a porridge, it’s not a gravy, it’s not a sauce, it’s not a cream… it’s pirão!

…but it’s very easy to make.

The traditional recipe asks for fish broth.

However you can prepare a vegetarian/vegan one without problems:

Boil coconut milk (or vegetables broth), tomatoes, parsley, garlic, onions, chives, pepper, and fresh cilantro.Salt to taste.

Add the manioc flour slowly, always stirring, until you get a thick cream.

That’s it.

The consistency is up to you really. Some people prefer a more liquid – porridge like – consistency. I prefer it a bit thicker, like the one above,
