Jorge’s Birthday Cake


– 1 cup coconut milk
– 2 cups  sugar
– 3 cups flour
– 1/2 cup margarine
– 3 eggs
– 1 T baking powder

Beat the egg whites until they form firm peaks and set aside. Beat the egg yolks with sugar and margarine until
creamy then add slowly the coconut milk and the flour. Add the yeast. Beat until blended. Add the egg whites mixing gently. Place in an baking pan coated with margarine and dust with flour. Bake (180 º C) until it gets golden and when you stick a toothpick, it comes out clean. Remove from pan and let it cool.

Rum Syrup

250 ml of filtered water
100 g sugar
100 ml of rum
Place water and sugar in a pan and let it boil. Remove from heat and add the rum. Reserve.

Coconut cream

1 can sweetened condensed milk
200 ml coconut milk
250 gr grated coconut
1 T coconut fat

Pour the condensed milk into a pan, add the coconut milk and the grated coconut. Stir constantly until it gets thick and you can see the bottom of the pan when you move the spoon diagonally. Remove from heat. Add the coconut fat. Mix well. Reserve.

Rum glace

2 cups confectionery sugar
2 T rum

Mix well until you get a thick cream. Reserve

Cut the cake in half. Brush generously both halves with the rum syrup. Spread the coconut cream. Mount the cake. Cover with the glace. Keep in the refrigerator for at least 4 hours before serving.

PS: Since I am in Brazil, I have used Cachaça instead of Rum.

    O Bolo ficou um mimo. Este ano o bolo vai ser pura invenção, vamos ver se não me arrependo.
