Fried rice is made from cold rice that has already been cooked by boiling. The use of leftover rice and other leftover ingredients is common when cooked at home. This “leftover” approach also means that the ingredients and flavours that can be used to create versions of fried rice are infinite. You can eat it either as an accompaniment to another dish, or as a course by itself.
OBS: YOU CANNOT MAKE FRIED RICE WITH FRESHLY COOKED RICE. The best rice to use is leftover rice that’s been lying in the fridge for at least a day. This will turn the grains firm and get rid of the excess moisture.
2 cups brown rice – cooked
1 teaspoon mustard seeds
1/2 cup chives – chopped
2 bananas – sliced
chopped peanuts (or any other nut) to taste
Add 2 table spoons of canola oil and 1 table spoon of sesame oil to a LARGE pan. You need SPACE. I always prepare fried rice in a wok. When hot, add the mustard seeds stirring until they pop. Add the rice, the chives, and the bananas. Stir until fried. Taste the rice and adjust salt if necessary. Serve sprinkled with chopped peanuts.
