Jujuba (Jelly candy)


This is my husband’s favourite treat. Jelly candy – called Jujuba, or Bala de Goma in Brazil.

I never made them at home, but for those interested on giving it a try here is a recipe:

Preparation time – 12 h

In a heavy bottom pan (not in a water bath) place:

200ml water
2 tablespoons powdered drink – flavor of your choice
2 tablespoons unflavored gelatin
500gr sugar

Stir to dissolve gelatin. Before reaching the boiling stage pour the sugar in the pan – do not do this in batches – just pour everything in one go. Continue stirring until the mixture boils, remove from heat and pour into a (not very large) pan greased with margarine or vegetable oil. The ideal is to fill the form until it reaches 1cm from the top – or you can use a greased acetate chocolate mold. Leave it out covered but of the refrigerator for 12 hours. If you put it in the fridge with will not harden.

The next day cut into squares with a large knife (or unmold them). Roll them on caster sugar. Keep in a jar or a can.

  1. are these the hard jubes, or the softer squishy ones? My husband loves the hard ones, and I’d like to try making some!

    • they are not very squishy but I am not sure how hard you want them to be.
      my suggestion is that you make a test adding another 1/2 teaspoon to the amount of jelly in the recipe
