Zucchini omelette


* 1 tea spoon Olive oil
* 1 large Zucchini sliced thin
* Salt & pepper to taste
* 1 large Egg beaten

Heat oil until hot; fry zucchini until zucchini is tender. Season with salt and pepper to taste.

Pour the beaten egg over zucchini, lifting the edges of zucchini so the mixture run evenly over them. Cook slowly, running spatula around edges and lifting egg mixture to allow uncooked portion to flow underneath. Cook until eggs are firm, and slide onto a serving platter.
