Dom Fuas inspects new addition to kitchen’s spices pantry: Sunchang Gochujang

It is a savory and pungent fermented Korean condiment, a dark chili pepper paste with a rich, piquant flavour. It is made from glutinous rice powder mixed with both powdered, fermented soybeans and red peppers. Traditionally, it has been naturally fermented over years in large earthen pots outdoors.

Sunchang is a Korean village. It’s claim to fame is its red pepper paste or gochujang, which is supposed to be distinct from other recipes. The governor of the county puts his personal seal of approval on it to make it authentic Sunchang Gochujang.
