Masala Chai

1(or 2) teaspoon English Breakfast tea (or other black tea)
2 teaspoons Mate tea (my adaptation – not included in the original Chai recipe)
All the above photographed spices crushed (the red pepper is not something that might appeal to everybody and can be removed or substituted with aniseed)
Boil 2 cups water, add spices, tea and a tablespoon of sugar (or more if you like sweeter drinks). Stir. Remove from fire.Cover with a lid. Let steep.
Bring to boil again and add a cup of milk, stirring constantly.
Run through a sieve, and serve.
