One of my favourite recipes. An upside down pie that works with almost any fruit you want – bananas, apples, plums, pears, apricots, you choose. This time I used 6 bananas that were agonizing in the kitchen…
Preheat the oven to 180°C (350°F). Melt 125g of butter (2 small bars or 3/4 of a large one), set aside to cool. I prefer unsalted butter.
Butter a cake pan. Peel and cut up the fruit. Place the pieces of fruit at the bottom of the pan.
Mix 1 cup of sugar with two eggs (3 if eggs are small). Add 1/2 cup of flour and 1/2 teaspoon of baking powder. Add the cold melted butter. Pour the dough on the fruit in the pan, and bake for 40 minutes.
Oh, it’s unbelievably good, trust me.
the filling – 2 apples, 6 bananas, 150gr of white chocolate in pieces
