Hot Paprika & Cumin Tofu with Red Onions & Sesame Rice


400g firm, fresh tofu frozen and thawed
Flour, hot paprika and cumin to dust the tofu
Vegetable oil, for frying (I use canola oil)
2 large red onions sliced
4 garlic cloves, crushed
1 tbsp chopped ginger
2 tbsp soy sauce

Cut the tofu into squares and toss them in the flour+paprika+cumin mix, shaking off the excess. Pour in enough oil in a large frying pan, and bring up to frying heat. Fry the tofu in batches in the oil, turning the pieces as you go. Once they are golden all around, and have a thin crust, transfer to a paper towel.

Remove any sediment from the pan and the oil, leaving just enough to sauté the onions, garlic and ginger for about 15 minutes on low-medium heat, stirring occasionally, until the contents of the pan are shiny and totally soft. Add the soy sauce, stir, then warm the tofu in the sauce for about a minute. Serve hot with steamed rice.

I added a few drops of my cilantro oil for colour and extra flavour.
