Spice cake with chocolate ganache
Bake it now and thank me later.
It is a “Holy Cake Batman!” kind of cake.
2 cups of flour
1 1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cardamom
1 1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup brown sugar (more if you like sweeter cakes)
1/2 cup canola oil
1/2 cup yogurt
1/2 cup milk
1/2 c toasted pecans, chopped
1/2 cup raisins (or any dried fruit you like – I like to replace raisins with dates)
(you can also add almonds, or other kind of nuts if you like it)
Preheat oven to 350. In a large bowl, combine the flour, spices, baking soda, and salt. Add the brown sugar, egg and oil and blend gently without beating. Then add the milk, the yogurt and the dried fruit. Mix until just combined.
Grease and flour a pan and pour in the mixture. Bake until after inserting a knife it comes out clean, 45 minutes average. Let cool slightly, invert cake from pan and cover with chocolate ganache or serve with vanilla ice cream.
