What to do with the remaining of the pods after you use the seeds for your chai or any other dish?
Don’t throw them away!
Get a jar, add 1/2 cup of sugar (any kind of sugar) and whenever you use a cardamom pod you add the peel to the sugar and give the jar a good shake.
The result is not as strong as a sugar infused with whole pods, but nonetheless very nice.
You can always add 2 or 3 whole pods to the mixture if you want a more pungent cardamom aroma.
